Lemon drizzle loaf ingredients
225g caster sugar
225g butter
4 eggs
1 lemon (zested)
225g self-raising flour
Juice of 2 lemons
3 tbsp of icing sugar
Method
Cream together the butter and sugar, and beat in the eggs one at a time. Once combined add the zest of one lemon. Finally fold in your sifted flour. Bake at 160 for 35-40 minutes. Whilst your cake is in the over mix the juice of 2 lemons and the icing sugar to make your drizzle. As soon as the cake is out of the oven, prick with a fork all over and cover with drizzle.
